Salads, the star dish of summer

From Hotel La Laguna Spa & Golf we propose simple recipes of perfect salads for this time of the year in different countries. In fact, sometimes you need  translation services to know much better what kind of food is prepared in other countries.

Salads are like gold: ductile and malleable. They accept fruits, cereals, legumes, nuts … and also many types of dressing, so the variety becomes infinite. The only limit is that our imagination imposes on us.

Greek salad

Few salads are as rich, complete and easy to prepare as the Greek salad. Your ingredients?: Cherry tomatoes, cucumbers, feta cheese, yogurt and olive oil. A Mediterranean salad and a classic of the summer.

Ingredients for 6 people

1 box of cherry tomatoes,

1 cucumber,

150 g of black and green olives,

150 g Feta cheese,

olive oil.

Yogurt sauce

1 creamy natural yogurt,

1 lemon,

1 tablespoon extra virgin olive oil,

salt and pepper.



Peel the cucumber and chop it.

Cut the tomatoes in half, the olives and cheese in dice.

Mix and season with oil.

Sauce: drain the yogurt, mix it with a spoonful of juice and oil. Pepper it.

Ensalada griega

Corn salad

A classic: the corn. Essential ingredient in many salads, you can not miss in your summer salads. Beetroot, york ham and a vinaigrette become the perfect companion to create this simple and delicious dish.


Ingredients for 6 people

1 can of corn

1 bottle of beet

2 slices 1 cm thick york ham

2 slices 1 cm thick cream cheese


6 tablespoons olive oil

3 tablespoons of vinegar

1 teaspoon of mustard

salt and pepper



Cut the ham and cheese into cubes, mix with the corn.

Make the vinaigrette by beating all the ingredients well to leave an emulsified sauce.

Add the sauce to the previous preparation and finally mix the beets also cut into cubes.

Its ingredients like tomato, avocado or capers provide the vitamins you need, and lettuce and burrata give you that freshness you are looking for in your summer dishes. Simple and easy to prepare, it allows you to create a delicious dish in a very short time.


Ingredients for 6 people

6 large tomatoes,

1 burrata,

1 avocado,

150 g of bacon,


Basil leaves,



Lettuce leaves.

Basil oil

2 dl of extra virgin olive oil,

1/2 bunch of basil,



Laminate the tomato, without peeling, in the width without reaching until the end. Insert into each hole a thin sheet of burrata and another one of avocado.

Brown bacon without fat until crispy.

Fry the basil and capers in hot oil until crisp.

To serve: present each tomato on a plate, with lettuce, pine nuts, bacon, leaves and fried capers. Salse it with the oil.


Chicken salad with apple

Chunks of chicken breast with apple and walnut, garnished with a paste of mayonnaise and sage, and served on leaves of fresh lettuce.



3 cups chicken breast, cooked and crumbled

2 large apples, cut into cubes

1 cup celery, chopped

1/2 onion, chopped

2 tablespoons mayonnaise

1 teaspoon chopped fresh sage

3 tablespoons water

1/2 cup chopped walnut

5 lettuce leaves



Mix the chicken, apple and celery in a salad bowl.

Blend the onion, mayonnaise, sage and water until uniform consistency. Pour over the salad and add the chopped walnut. Mix carefully and serve the salad on lettuce leaves.
